For at least the last 30 years, the world has been designed around Just in Time manufacturing, which keeps as little raw material in stock as possible.
Kirin chips are getting better but I won’t consider devices with them until they start releasing what we need to make custom ROMs more easily.

Shelly makes smart bulbs. They can be used only locally if you want or connect to homeassistant.
I have some Shelly plugs and they’re great. If I ever buy a house, I plan to populate it with Shelly devices. I do want to try out Zigbee, but I don’t have a need yet as I rent right now.
Nextcloud - If you’re decent with computers and have a computer at home that can run 24/7. Could be an old laptop, even. There’re are other self-hosting alternatives as well.
Proton Drive - If you don’t mind spending a little for privacy. There are other privacy centric storage options, also.
A USB flash drive if it’s just for documents and you don’t mind walking around with one.
OnlyOffice is a decent alternative as well, as someone else has mentioned. But I’m not sure how privacy focused they are (idk off the top of my head, at least)
This looks like exactly what I want if it had an android app.
