Oh, over the Internet, not just the local network … then maybe Lufi?
for example this instance: https://upload.disroot.org/
Works well, but not particularly fast with large amounts of data (up to 2GB possible)

KDE-Connect? https://kdeconnect.kde.org/
It works very well for the data exchange between Linux, Android, iOS and Microsoft devices. https://apps.kde.org/kdeconnect/
Of course, it can do a lot more, it’s a bit oversized for just data exchange
I would recommend DivestOS. If you need MicroG, there is also iodeOS. I would recommend this over /e/OS because system apps can also be selected or uninstalled.
There is a very good series of articles here, but in German: https://www.kuketz-blog.de/android-ohne-google-take-back-control-teil1/ Parts 1, 5, 6, 7 & 8 can also be realised without custom ROM and root.
Yes, you could also look at Neo Launcher or Shade Launcher, both at in the F-Droid repo by Izzy
Here is a list of other “Minimalistic / simple launchers” as well.
“Magic Earth” is unfortunately not FOSS, but it is “one of the few navigation apps that do without advertising and tracking.” (mobilsicher.de). It includes also “Crowd Sourced Traffic”.
“Rain” is also available at Izzy’s: https://android.izzysoft.de/repo/apk/com.yoshi.rain
FairEmail is also recommended by many. It has even more functions, but is therefore also a bit more complicated.
for Android: k9-Mail
Yes, sorry, I had overlooked that. That’s why I recommended Lufi afterwards.
